[FLINK-40145][build] Do not bundle dependency module descriptors in the
model uber jars
The shade filter only dropped META-INF/**/module-info.class for jackson, so
another dependency's descriptor survived and, with the Multi-Release entry
from
FLINK-40084, made the jar claim that dependency's module name. Javadoc then
fails flink-model-triton on a split package with kotlin.stdlib.
