   ### Description

react-table's default sort method compares cell values with \`>\` / \`<\`.
When a column's accessor returns a plain object, every comparison is a tie, so
clicking the column header has no effect. This PR fixes the two places in the
web console where that happens.

   #### Supervisor statistics table
   The \`Totals\` and moving-average (\`1m\`, \`5m\`, \`15m\`) columns use
accessors that return a whole \`RowStatsCounter\` object. They now have a
\`sortMethod\` that sorts by \`processedBytes\` (the \`Input\` value shown in
the cell). Missing counters are treated as 0, and values are converted with
\`Number\` because \`processedBytes\` may be a \`bigint\`.

   #### MSQ execution stages: sort stat detail table
   The \`Counts\` column's accessor returns a map of \`value -> number of
workers reporting it\`. It now sorts by the total of the worker counts.

I audited the other tables in the console for the same pattern. The
remaining columns either return scalar values, already have a custom
\`sortMethod\` (the task status column), or are in tables with
\`sortable={false}\` (the query result and data loader sample tables).

   #### Release note
Fixed sorting in the web console's supervisor statistics table and in the
MSQ sort stat detail table.
