fix(docs): STRING default soft limit 1MB -> 10MB (#4335)
## Summary
Correct the STRING default soft length limit to 10485760 bytes (10 MiB)
in development and 4.x, English and Chinese. Clarify the BE setting and
remove a duplicated Chinese sentence.
## Source verification
`string_type_length_soft_limit_bytes` is 10485760 on Apache Doris master
and branch-4.0/4.1/4.2. The original draft left versioned docs
unchanged, but 4.x has the same default and requires the correction.
## Validation
All four pages compile using the Docusaurus preprocessing/compiler path.
`git diff --check` passes. No source build, cluster execution or full
website build was run.
