Closing this as answered, and sorry for leaving it open so long.
camel-file-kafka-connector is still part of 4.22.x with the same options: a
fixed name such as `messages-${date:now:yyyyMMdd}.txt` sends every record of
the day to the same file (overwritten by default, see
`camel.sink.endpoint.fileExist`), so use an expression that is unique per
record, for example `camel.sink.endpoint.fileName=${exchangeId}.txt`, or set
the `CamelHeader.CamelFileName` header on each Kafka record as described in
https://camel.apache.org/camel-kafka-connector/next/user-guide/basic-configuration.html#BasicConfiguration-MessageLevelHeaders.
The sink task does not expose the Kafka record offset as a Camel header, so
the offset cannot be used in the file name directly. If something does not work
as described on 4.22.x, please open a new issue with the version, configuration
and stack trace.
