Review Comment:
   Optional: these checks run against the in-memory model. Users see the JSON 
written by `Json.mapper()` or `Json31.mapper()`, and the 3.1 mapper uses 
different mixins. A quick check on 
`RestOpenApiSupport.getJsonFromOpenAPIAsString(openApi, config)` would also 
cover serialization for both versions. For example, assert that `"items"` holds 
the `enum` and that no `"enum"` sits next to `"type" : "array"`.
