I think you can workaround this by adding
quarkus.arc.unremovable-types=com.fasterxml.jackson.databind.ObjectMapper
to your application.properties.
We then need the jsonpath extension to declare `ObjectMapper` as unremovable
through `UnremovableBeanBuildItem`
