### Search before asking - [x] I have searched the issues and found no duplicate SDK migration subtask. ### Description This is the `amoro-openapi-sdk` slice of Step 7 in #4203, agreed with @lintingbin [here](https://github.com/apache/amoro/issues/4203#issuecomment-6283241980). I will move `OpenAPITest` to Jupiter annotations and assertions, replace the SDK's direct JUnit 4 test dependency, and preserve the WireMock dynamic port, cleanup, and request assertions. I will compare the executed tests before and after the migration and run the SDK build and formatting checks.
