Hi Alessio. There is a target property EXCLUDE_FROM_DEFAULT_BUILD. If you set this on a target to true, the target will be removed from "Build Solution."
2.8.11 should introduce a per-config variant of this property, EXCLUDE_FROM_DEFAULT_BUILD_<CONFIG>.
