Quotes are generally a pain. I haven't tested it, but I would try
putting the option specification in quotes (for cmake), like this:
set (CMAKE_CXX_FLAGS_RELEASE ${CMAKE_CXX_FLAGS_RELEASE}
"/MyCustomTool:\"$(SolutionDir)\"")
