I don't use ccmake, but wouldn't just cmake followed by make do what you want? 
That's what we do (wrapped in a ton of other stuff that cleans up the 
environment etc., but essentially it comes down to just those two commands).

Is there a way to automatically (in a bash script, for example) configure and 
generate using defaults from a CMakeLists.txt file? That is, automate doing the 
following:

ccmake ../CMakeLists.txt
press 'c' twice
press 'g'
