To toot my own horn, my book, /Functional Programming for the Object-Oriented 
Programmer/, is nearing completion, has gotten good reviews, and has *lots* of 
exercises. (For example, Part 1 uses five chapters to embed progressively more 
realistic object-oriented programming constructs into Clojure.)
