At this time, I'm going straight by the book (i.e. gcc built for C/C++). haven't built it with all the languages enabled. Only thing I did by hand was setting up /etc/profile and friends including the content of /etc/skel and finally, adding a user. That said, to build the bootable usb key, I still need to compile 274 packages so ALFS is useful in that regards even if it break every ~20 packages.
