For software for which there are no pre-built RPMs, I'm a big fan of using fpm to build the RPMs, rather than trying to write a .spec file by hand:
https://github.com/jordansissel/fpm You can point fpm at a directory tree, and build a RPM (or .deb, or Solaris pkg, etc.) for it. There's options for pre-/post-install scripts, dependencies, requirements, etc. as well.
