I don't typically use the Network Manager since it can be a bit wonky and have a mind of its own.
The routing of traffic from the Beaglebone to the internet through a Ubuntu host seems to pop up quite often so perhaps it needs a special place or WiKi. This may or may not work though. You could try to use say the linux usb0 one and make the edits for your BB eth0 port.
