I was able to get the TI PRU cape <https://www.digikey.com/en/products/detail/texas-instruments/PRUCAPE/5031863?_ga=2.96281183.274420459.1601662755-1432520892.1585614320> working with the AI. It has the components you're looking for except for I2C. You'll have to make a custom device tree overlay for it, but you can then use it to work through Mark Yoder's excellent tutorials <https://markayoder.github.io/PRUCookbook/>. You can also work through the TI pru-software-support-package <https://git.ti.com/cgit/pru-software-support-package/pru-software-support-package> that includes a number of examples and labs.
