My first question is how much data are you backing up?
You can use external hard drives for this nowadays and just switch out the drives. In our setup, I have /home mapped to the external drive. We switch out the drives weekly or so. When I do the switch, I do power off and power on again. The system doesn't seem to know that anything changed. If you don't have a lot of data (under 500 GB or so), USB drives will probably be okay. If you have more, I recommend using eSATA.
