v1-0 is the tag used for the latest changes to the stable branch. Releases are still your best bet, but if you are monitoring the CVS mailing list for commits to v1-0 stable, then you may see a patch go in that fixes some bug you've been having. The rule generally is don't run CVS unless you're monitoring the CVS mailing list. -rv1-0-5 will get you version 1.0.5 of Asterisk, which is the latest released "version".
