If your goal is capture all SIP traffic, there may be other tools better suited.

For example, tcpdump, dumpcap, or pcapsipdump can capture SIP packets. pcapsipdump can even capture the RTP along with the SIP so you can listen to the call if that doesn't make your bosses and coworkers freak out.

I like to capture all of the SIP traffic in a pool of files that
expire after 30 days. Then, when somebody says 'hey, my call didn't connect yesterday' I have something to work with.

sngrep is a great tool for searching for calls and displaying decoded dialogs.
