It depends on the model of Polycom phone. 

On the IP500 series it's defined in the sip.cfg by: 

<mwi msg.mwi.1.subscribe="4190@sip" msg.mwi.1.callBackMode="contact" 
msg.mwi.1.callBack="4181" 

The calling extension is 4190, the callback extension for voicemail is 4181. 
It's different on the 550 series.
