Is there a way to configure a channel to ethernet, such that we could use one of the VoIP long distance carriers, like Vonage?
Yes.

vonage does not (supposedly) allow people to use the username/password they give you. If you can figure out some way to weasel it out of them or the ATA-186, I'm sure the list would love to know.
