We are upgrading as well & have been using the 7.5 client with both our 6.3 production and 7.5 test environment. I switch back & forth between the environments using the same client.
Just make sure that if you go to patch 3 of the client that you get patch 3a. I don't know that plain old patch 3 causes any problems in 6.3, but it sure does in 7.5.
