So, I have been making homemade chicken noodle soup through the covid thing for folks. The stuff in the chicken bones really does help with the aches. A work affiliate mother got a rough cancer diagnosis and put on hospice the other day. End stage cancer has aches, I've watched it, aches is an understatement. So I decided to make a double batch for both the person and the inbound family for now. I usually do whole fryer chickens, but most of those are brined, I saw these young chickens with no salt brine. Older people are all on some sodium restriction so I figured this would be versatile. Holy cow. I knew they were a bit bigger, but I didnt realize the meat ratio on young chickens was so much higher than a fryer. I'm gonna end up with 4 to 6 gallons of soup from two chickens after broth, bone broth, noodles, and vegetables. Some dumb broad sued McDonald's successfully for dumping hot coffee on her crotch. I feel I should be paid for no one telling me how much the soup ratio changes here. Also, this story is a lame way of fishing for recipes. Mine so far is soup Minced garlic (you cant actually measure this) 1/2 lid dry rosemary 1/2 lid dry thyme 1/2 lid dry rubbed sage 1/4 lid dry parsley I dont know how to correlate to fresh Salt to diet 1 chicken Water as needed to keep bird drowned Boil and bone after 4 hours Simmer meat broth 1 hour
1 head celery, 1 large onion, a lot of carrots. 1/4 stick butter Cut onion to preference and sauteed in butter til translucent. Slice carrots as thick as makes you happy and toss in until they get just soft. Slice celery (leaves and all) as thick as pleases you. Toss in til warm. Dump in pot of soup with more water. Noodle 2 cups flour 2 large eggs 1tsp salt 3 tbsp milk Fold until even Roll til thickness pleases Cut as wide as tickled your fancy Cuck in boiling soup til noodles float Eat that shit My daughter made a bunch of penises out of the dough for her cousin when she had the Rona with this recipe.
